Do you ever sit back thinking about old meals you’ve made? No? Not really? Ok… Well… I do sometimes and this time I keep thinking back to these healthy apple pancakes I made in October after apple picking at Campbell’s Orchards in the county. Oh, my goody goodness they were good. My go-to pancakes are equal parts rolled oats and water plus a banana, throw it in the Vitamix with a dash of cinnamon and you’re off to the races. These ones were a tad different but still super easy!
ingredients (2-3 servings):
- 1 cup of rolled oats
- 1/2 cup of unsweetened applesauce
- 1/4 cup of water
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1 tablespoon baking powder
- 1 apple (chopped)
Just toss everything (except for the apple) into the Vitamix and blend away. Turn the heat to medium/high and add a little vegan butter to the pan or, if you have a good non-stick pan then you don’t need to add anything. Cook up the pancakes as you would with any other recipe, keep an eye on them and flip when they are ready. (Believe in yourself! 🙂 ) While pancakes are cooking away, chop up your apple which you can toss in cinnamon for some added flavour. When the pancakes are cooked up, stack them up, top them up with the chopped apples and load up with some maple syrup. Delish!
