Pretty Gud Garlic, Ginger and Sesame Noodles

What do you do when your organic delivery brings you a lot of bok choy? My answer was to make a noodle stir-fry. 🙂

ingredients (approx 4-6ish servings):

  • 1/3rd package of vermicelli noodles
  • 2 cloves of garlic, minced
  • 2 shallots, minced
  • 4 or 5 c. bok choy (approx)
  • 2 c. spinach (approx)
  • 1.5 tbsp. maple syrup
  • 1 tbsp. rice vinegar
  • 1 tbsp. sesame oil 
  • 2 tbsp. soy sauce 
  • 3/4 tsp. ginger (preferably fresh)
  • 1/2 tsp. red pepper flakes
  • splash of water here and there if needed

Note – I made this one on the fly so the amounts are estimated. 

Boil up the rice noodles and set aside. In a large saute pan heat over med-high heat water saute garlic and shallots. In a small container, mix together maple syrup, rice vinegar, sesame oil, soy sauce, ginger and red pepper flakes. After cooking garlic and shallots for 2 minutes or so lower heat to medium and add sauce followed by bok choy and spinach. Let the bok choy and spinach cook down for approx 7-10 minutes then stir in the noodles. Season with salt and pepper if desired and top with black and white sesame seeds and more red pepper flakes if you’d like an extra kick. Enjoy!
